L&L was one of the first restaurants to offer "mini-plates" and a variety of mixed plates. Over the years, Flores and Kam have made several changes to their menu - for example, adding what is now commonly known as the "plate lunch." They continue to develop new menu items and have recently begun offering Chinese takeout at their new locations. Their ability to combine quality control, reasonable prices, and sizable portions has made L&L the fastest growing fast food operation in the State of Hawaii. The principals continue to seek potential locations in the United States and all over the world.


In the late 1950's, Mr. & Mrs. Robert Lee, two Korean immigrants, opened an outlet for their L&L Dairy business on Liliha Street in Honolulu close to where the Honolulu Trolley ended its run and looped back into the heart of the downtown Honolulu. L&L Dairy was then sold and renamed L&L Drive-Inn in the early 1960's when the former owners started serving hot dogs and hamburger steak aside from milk, butter and eggs. The restaurant was purchased by Johnson Kam and Eddie Flores, Jr. in 1976. Although the early years were extremely difficult, the principals worked hard and persevered, honing their skills in cost management, quality control, and employee training.
In 1988, Johnson and Eddie decided to franchise and expand their operation. They were among the first restaurateurs in Hawaii to incorporate the local fast food concept of plate lunches, usually purchased from independent vendors in mobile lunch wagons, into a chain operation at fixed locations. Today, there are over 85 L&L restaurants with an estimated 1,500 employees in Hawaii, California, Nevada, and Washington. As Hawaii Business Magazine phrased it, during this period of growth the L&L's "were sprouting like mushrooms after a rainstorm."
The average increase for the past five years has been seven new restaurants per year, last year alone there were 20 locations opened. Each restaurant varies in the number of employees it hires. Each location has an average of five full-time and seven part-time employees. The principals' plan of continued expansion is estimated to result in a projected increase of 100+ employees each year.
The owners attribute their success to a decentralized system of ownership in which each restaurant is a separately incorporated profit center run by partners in the corporation or individual owners. Johnson and Eddie recognize hard-working, loyal employees by offering them the opportunity to own their own franchises. Typically, these employees (usually immigrants or members of ethnic minorities) do not have the financial resources to buy their franchises outright, so Johnson and Eddie offer them assistance with financing and management. In this way, employees who demonstrate their competence can eventually become managers and owners of their own L&L franchises. In recent years, the principals have been faced with an increase in competition, as well as a depressed local economy. Despite these trying times, which have resulted in the downsizing and closing of many local and national competitor fast food franchises, L&L continues to display impressive growth and profitability. Gross receipts have risen an average of 30 percent a year.

• We will lend a copy of our operation manual that contains mandatory and suggested specifications, standards, and procedures. This manual is confidential and remains our property.
• We will provide standard décor and layout plans to you to modify and to conform to our approved location by architect or contractor. You must pay the cost of the construction and remodeling.
• We will train you and your manager. We do not charge for the training but you must pay for transportation, accommodation, and food costs for you or your manager. Training is held in Honolulu or location designated by us.
• We are not obligated to provide any other supervision, assistance or service before the opening of your L & L restaurant.
